It's week one of my calendar and I'm already derailed! Nothing is cooking in this house tonight! I work out on Wednesday nights and by the time I get home at 7:30 something... It needs to be a grill-able item or Subway! Summer school is really putting me through the wringer this year! We have a good group but boy, they wear me out! Tonight, is my night off in the kitchen! However, I did find a recipe I really want to try on Pinterest. Now, I've tried some terrible recipes on there (Beware: crockpot stuffed peppers, were a dry yucky flop) but this one looks 1) fail proof (mostly) and 2) budget friendly!
At dinner on Monday, I was just informed by my boyfriend that when he was growing up, watermelon was eaten as a dessert because it was so sweet. Growing up, I always ate it with a meal just like you would at a picnic. Or as a snack. We had a stalemate over whether one could actually classify watermelon as a dessert item. I never thought of watermelon as a dessert. Desserts are brownies, cookies, pie, ice cream, anything with chocolate, etc. I had never really viewed watermelon as a "dessert." Then I found this little gem from iSaveA2Z's Blog....
This is my type of summer cooking! You simply "frost" the watermelon with cool whip and then decorate with other berries or nuts. It looks amazing and totally justifiable as a dessert.Watermelon and cool whip are both a summer staples at my house so I'll have to post pictures once I actually "test" the recipe out! It's the cutting it to look like a cake that most worries me... I'll keep you posted!
